Banana Carrot Cake
Ingredients
1 1/2 C. flour
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. cloves
2/3 C. vegetable oil
1 C. sugar 3 ripe bananas; mashed, to equal 1 C.
2 eggs
1 C. old fashioned oats
3 medium carrots; shredded, to equal 1 C.
1/2 C. nuts; chopped (optional)
Cooking Instructions
Heat oven to 350. Grease a 9 inch square baking dish. Combine flour, baking powder, salt, baking soda and spices. Combine sugar, banana and oil; add eggs, 1 at a time, beating well after each. Stir in flour mixture. Add oats and carrots; mix well. Spread in pan; sprinkle with nuts. Bake about 40 minutes or until tested done.
