Banana Bread Sugar Free
Ingredients
3/4 C. ripe bananas, mashed
1/3 C. vegetable oil
2 extra large eggs
1/2 C. water
2 C. all purpose flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 C. chopped nuts (optional)
1 tsp. baking soda
2-1/4 tsp. baking powder
Cooking Instructions
Preheat oven to 325 degrees F. Coat a loaf pan with vegetable oil or shortening. In a large bowl whip together oil, eggs, and water until very light and smooth. Add flour cinnamon, nutmeg and nuts, if desired, and mix well. Stir in baking soda and powder quickly, then mix about 30 times until smooth. Bake for 50 to 55 minutes, or until a knife come out clean.
