Baba Ghanouj
Ingredients
1 medium eggplant
1 clove garlic, minced
1 Tbsp. tahini
1/8 tsp. cumin, ground
Cooking Instructions
Preheat the broiler. Slice eggplant crosswise into 1/2-inch slices. Place them on a baking sheet. Broil 3 inches from the heat until soft and water beads on the surface. Cool. Peel the slices, then puree in a blender or food processor along with the rest of the ingredients. Chill and serve with vegetables.
