Aubergine Bake
Ingredients
2 large tomatoes sliced
1 aubergine thinly sliced
1 large onion sliced grated vegetarian cheese
1 small cart plain yogurt
breadcrumbs
herbs (basil or oregano)
Cooking Instructions
1. Grease ovenproof baking dish with vegetable oil. Place in it one layer of tomatoes, covered by a layer of onion, then aubergine, adding salt, pepper and herbs to taste. 2. Repeat process. Cover with yogurt, cheese then breadcrumbs. 3. Bake in hot oven 375 degrees for about 40 minutes.
