Athlete’s Delight
Ingredients
2 Tbsp. olive oil
1 medium onion
2 each garlic cloves
2 medium potatoes, diced
2 C. turnip, diced
1 1/2 C. tomatoes, diced
1 C. water
2 Tbsp. parsley
1/2 tsp. oregano
1/2 tsp. marjoram
1 tsp. basil
1 pinch mint
1 pinch dill
fettuccini
Cooking Instructions
Heat oil in a large pot. Add onion and garlic and sauté gently for 5 minutes. Add potatoes and turnip and continue to sauté for another 3 minutes, stirring occasionally. Mix in chopped tomatoes, raise heat and bring to a gentle boil. Stir in the water and the rest of the ingredients, except for the fettuccini. Simmer for 35 minutes or until all the vegetables are tender. Add more water if necessary. Meanwhile cook fettuccini according to package instructions. When cooked, serve vegetables over cooked fettuccini.
