Apricot Prune Upside Down Cake
Ingredients
1/4 C. margarine or butter
2/3 C. packed brown sugar
8 3/4 ounces apricot halves, drain
12 pinches cooked prunes
1 1/3 C. all-purpose flour
1 C. granulated sugar
1/3 C. shortening
3/4 C. milk
1 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
Cooking Instructions
Heat oven to 350 degrees. Heat margarine in 10-inch ovenproof skillet or square pan, 9 x 9 x 2 inches, in oven until melted. Sprinkle brown sugar over margarine. Arrange apricot halves and prunes in skillet. Beat remaining ingredients on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour over fruit in skillet. Bake skillet 45 to 50 minutes, square 50 to 55 minutes or until wooden pick inserted in center comes out clean. Immediately invert onto heatproof plate. Let skillet remain over cake a few minutes. Serve warm and, if desired, with Sweetened Whipped Cream
