Apple Walnut Cake
Ingredients
2 C. sugar
1/2 C. margarine
2 large eggs
2 tsp. vanilla extract
2 tsp. baking soda
1 tsp. salt
2 C. all-purpose flour
1 tsp. ground cinnamon
4 C. apples, sliced thin
1 C. black walnuts, chopped
Cooking Instructions
Cream margarine and sugar in mixing bowl. Add beaten eggs and vanilla extract and whisk to blend well. Combine baking soda, salt, flour and cinnamon; add to egg mixture and beat until thoroughly mixed. Add peeled and thinly sliced apples along with the chopped walnuts to batter. Blend only enough to spread apples and nuts throughout batter. Grease and flour a rectangular cake pan. Pour in the batter and bake in a preheated 325-degree oven for 1 hour.
