Apple Pork Curry
Ingredients
2 pound lean pork, cut into 1/2 inch cubes
1 apple peeled and chopped
1 small onion chopped
1 clove garlic crushed
1 tsp. concentrated chicken broth
1 Tbsp. curry powder
1/8 tsp. cinnamon
2 tsp. ground ginger
1/2 tsp. salt
1/2 C. orange juice
Cooking Instructions
In a slow cooker, combine the above ingredients. Cover and cook on low for 5 or 6 hours or until pork is tender. Turn pot on high. In a measuring C., combine 2 Tbls. cornstarch and 2 Tbls.. cold water. Stir into pork mixture. Cover and cook until thick. Serve over rice and pass around peanuts, coconut, raisins, and chutney as condiments.
