Apple Pecan Pound Cake
Ingredients
2 C. sugar
1 1/2 C. vegetable oil
3 large eggs
2 C. all-purpose flou8r
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. vanilla
3 C. granny smith apples; peel, dice fine
3/4 C. flaked coconut
1 C. pecans; chop
Cooking Instructions
Mix the sugar and oil, add eggs and beat well. Combine flour, soda and salt. Add flour mixture to beaten egg mixture. Stir in vanilla, apples, coconut, and pecans. Mix well. Spoon butter into a greased tube pan. Bake at 325 for 1 hour and 20 minutes. Allow cake to cool to room temperature before removing from pan.
