Apple Oatmeal Cake 2
Ingredients
3/4 C. sugar
3/4 C. firmly packed light brown sugar
1/2 C. margarine; softened
1 C. low fat yogurt
2 tsp. vanilla extract
1/2 C. frozen egg substitute; thawed
2 C. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. apple pie spice
2 C. oats; uncooked
2 C. granny smith apples; unpeeled
Vegetable cooking spray
2 tsp. powdered sugar
Cooking Instructions
Cream sugars and margarine at medium speed of an electric mixer until light and fluffy (about 5 minutes). Add yogurt, vanilla, and eggs, and beat until well blended. Combine flour and next 3 ingredients; stir well. Add to the creamed mixture and stir well. Stir in oats and apple. Spread batter into a 13 x 9 x2-inch baking pan coated with vegetable cooking spray. Bake at 375 for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack. Sprinkle with powdered sugar.
