Apple Charlotte Passover Cake
Ingredients
3 egg yolks
2/3 C. sugar
Pinch salt
2 C. apples; grated
1/3 C. matzo meal
2 tsp. lemon rind; grated
1 Tbsp. plum brandy
2 egg whites
4 Tbsp. pecans; ground
Cooking Instructions
In bowl, beat until thick and lemon colored the 3 egg yolks, 2/3 C. sugar, and pinch of salt. Stir in 2 C. apples, grated, 1/3 C. matzo meal, 2 Tbls. lemon rind grated, 1 Tbls. and plum brandy. Fold in 3 egg whites, stiffly beaten. Turn into greased 8 inch spring form. Sprinkle with 4 Tbls. pecans ground. Bake at 350 degrees 35 minutes or until golden brown and firm. Cool before removing sides of pan.
