Alur Khosha Bhaja
Ingredients
1 Tbsp. Besan
1 C. Potato peels, firmly packed
1 Tbsp. Vegetable oil
1 Tbsp. White poppy seeds
1/8 tsp. Salt
1 dash Cayenne
Cooking Instructions
Put besan in a paper bag and add potato peels. Close the bag tightly and shake until the peels are evenly coated. Heat oil in a large skillet over medium low heat. Add poppyseeds and sauté gently until lightly browned. Add salt and cayenne. Add the peels and fry until they are a medium brown and crisp. Stir constantly: this will take anywhere up to 15 minutes. Remove from heat and serve hot or at room temperature.
