Okra With Corn And Tomatoes
Ingredients
10 oz. frozen whole kernel corn
2 C. fresh or frozen okra pods
2 medium tomatoes, cut up
1 medium yellow onion, chopped
1 stalk celery, thinly sliced
1/4 C. cooked ham, chopped (optional)
1/4 C. water
1 tsp. dried oregano leaves
1/4 tsp. salt
1/4 tsp. ground cayenne pepper
Cooking Instructions
In a 10″ skillet, combine all of the ingredients. Bring the mixture to a boil over high heat. Lower the heat and simmer, covered, for 10 minutes or until vegetables are tender, stirring occasionally. Simmer, uncovered, for 5 more minutes more or until most of the liquid has evaporated. Serves 6.
