Golden Cabbage
Ingredients
2 lb. white or green cabbage
2 qt. water
1 Tbsp. sugar
1 1/2 Tbsp. + 1 tsp. salt
2 C. milk
1/4 C. cornstarch
1/4 C. butter
1/4 lb. Swiss cheese, grated
Cooking Instructions
Remove and discard the core from the cabbage. Shred or chop cabbage finely and combine it with the water, sugar and 1 1/2 Tbsp. salt. Bring to a boil, cover and cook over low heat for 1 hour. Remove cabbage and drain thoroughly in a colander. Preheat oven to 400°. Combine the milk, cornstarch, butter and remaining salt. Bring to a boil over moderate heat, stirring. Combine with drained cabbage. Stir in all but 4 Tbsp. grated cheese and blend well. Pour cabbage mixture into a buttered 7 1/2″ x 12″ baking dish. Sprinkle with the remaining cheese and bake just until thoroughly heated. Run the dish briefly under the broiler and serve hot.
