Fried Green Tomatoes
Ingredients
2 Tbsp. bacon grease (to start, add more as needed)
4 to 5 very green tomatoes, thinly sliced, about 1/4″ thick
1/2 C. flour
dash of pepper
1/2 tsp. salt
1/2 tsp. chervil leaves (optional)
Cooking Instructions
If the tomatoes are especially juicy, drain them on paper towel. Mix together flour, pepper, salt, and chervil leaves. Dip the tomato slices in the mixture. Put slices into very hot bacon grease in frying pan. Turn heat to low and cook slowly. They will take about 15 minutes to cook on both sides. Place the cooked tomatoes in the oven, while you cook the rest. They should taste crisp.
