Smoked Salmon Pasta Salad 2
Ingredients
8 oz. sm. shell pasta
8 oz. smoked salmon, cut in 1/2″
strips
1 cucumber, peeled, seeded, sliced &
cut in quarters
1 sm. white boiling onion, sliced in
thin rings
4 green onions, thinly sliced,
including green part
2 Tbsp. drained capers
1 Tbsp. fresh dill or 1 tsp. dried
3/4 C. sour cream
1/4 C. mayo
2 Tbsp. lemon juice
Salt & freshly ground pepper
Cooking Instructions
Cook pasta in boiling water until tender, drain and cool. Combine all ingredients, refrigerate in air tight container 1 or 2 days. At serving time test for additional salt or pepper. May substitute scallop or prawns. Serves 6.
