Salmon Lasagne
Ingredients
1 med. onion, minced
1 clove garlic, minced
1/4 C. oil
1 can Italian tomatoes (14 1/2 oz.)
1 can tomato paste (6 oz.)
1 tsp. salt
1/4 tsp. basil
1/2 tsp. oregano
2 Tbsp. parsley
1 lb. lasagne noodles
8 oz. mozzarella cheese, sliced or
Jack cheese
1 lb. ricotta cheese
1 (1 lb.) can salmon, drained
4 oz. Parmesan cheese
Cooking Instructions
Cook lasagne noodles according to package directions. Saute onion and garlic in hot oil. Add tomatoes, tomato paste and seasonings. Simmer about 30 minutes. In baking dish place 1/3 each of sauce, lasagne, noodles, mozzarella, ricotta, salmon and Parmesan in order given. Repeat once more. In third layer, place noodles, ricotta, mozzarella, salmon and sauce. Top with remaining Parmesan. Bake at 350 degrees for about 30 minutes. Serves 6.
