Crabmeat Quiche
Ingredients
1/2 C. mayonnaise
3 Tbsp. flour
3 eggs, beaten
2/3 C. milk
1 lb. fresh lump crabmeat
8 oz. Swiss cheese
1/3 C. chopped green bell pepper
4 slices bacon, cooked and crumbled
2 (8 or 9 inch) pastry shells, unbaked
1/2 C. grated Parmesan cheese
Cooking Instructions
Preheat oven to 350 degrees. Mix together mayonnaise, flour, eggs, and milk. Add crabmeat, Swiss cheese, onion, bell pepper, and bacon. Pour into pastry shells. Sprinkle Parmesan cheese on top. Bake for 40 to 45 minutes. Yield: 2 pies or 12 individual miniatures.
