Smoked Turkey Sausage And Fruit Kebobs
Ingredients
1 lb. smoked turkey sausage, cut in bite-sized pieces
1 green pepper, sliced in square pieces
1 can (15-oz.) pineapple chunks or 1/2 fresh pineapple, cut in chunks
1 can (15-oz.) peaches or 3 fresh peaches, sliced
3 green onions, sliced in 3-inch strips
3 Tbsp. apricot preserves
1-1/2 Tbsp. Dijon mustard
4 (12-inch) skewers
Cooking Instructions
Glaze: Stir together apricot preserves with mustard in small bowl. Kebobs: Assemble kebobs on skewers, alternating smoked sausage with peppers, fruit, and onions. (If using bamboo skewers, soak skewers in water for at least 30 minutes prior to assembling kebobs to prevent burning.) Brush kebabs with half of glaze. Grill over medium coals for 5 minutes. Turn kebabs, brush on remaining glaze and continue grilling about 5 minutes.
