Trish’s Simplified Coq Au Vin
Ingredients
1 cut up chicken,dredged in flour
1/4 lb bacon,minced
1 md onion,chopped
1 md carrot,sliced thinly
1 clove garlic,peeled and minced
1/2 lb mushrooms,sliced
1 bay leaf
1/2 t thyme
Salt,to taste
Pepper,to taste
1 T marjoram
1 1/2 c dry red wine,(or to taste)
dash Kitchen Bouquet
Cooking Instructions
In a heavy, deep skillet or dutch oven, cook bacon until firm.
Retaining bacon fat, add all vegetables except mushrooms and cook until browned. Add mushrooms and
cook until limp. Remove vegetables, set aside, and brown chicken pieces in remaining fat. Add red
wine and herbs and reserved vegetables. Simmer, covered for 45 minutes to an hour, turning once.
Just before serving add Kitchen Bouquet.
