Grilled Cumin Chicken
Ingredients
2 (2 1/2 to 3 lb.) broiler fryers, quartered
Juice of 3 lemons
2 Tbsp. vegetable oil
2 Tbsp. ground cumin
1 Tbsp. salt
1 Tbsp. coarsely ground pepper
2 1/2 tsp. celery salt
1/4 tsp. red pepper
Cooking Instructions
Place chicken in large shallow dish; pour lemon juice over chicken. Cover and chill 2-3 hours, turning once. Remove chicken from lemon juice; rub with oil. Combine remaining ingredients; stir well. Sprinkle seasonings over chicken. Place chicken skin side up on grill; cook over medium-hot coals 30-35 minutes or until done, turning once. Yield: 8 servings.
