Brunswick Stew
Ingredients
1 pkg. (10 oz.) frozen whole kernel corn
1 pkg. (10 oz.) frozen lima beans
1 pkg. (10 oz.) frozen okra
2 1/2-3 lb. broiler-fryer chicken, cut up
2 C. hot water
1 med. onion, thinly sliced & separated into rings
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
1 bay leaf
2 med. tomatoes, each cut into 8 wedges
1/4 C. all-purpose flour
Cooking Instructions
1. Place unopened packages of corn, lima beans and okra in oven. Microwave at high (100%) until thawed, 6-8 minutes. If using oven other than Sharp Carousel, rotate after half the cooking time. Drain. Cut okra into 1/2 inch pieces. Set aside. 2. Combine chicken, water, onion, salt, pepper, garlic powder and bay leaf in 3-5 quart casserole; cover. Microwave at high (100%) until chicken next to bone is not pink, 18-25 minutes. Remove bay leaf. Remove bones and skin from chicken; cut into 1 inch pieces. Add chicken pieces, tomatoes, flour, corn, lima beans and okra to chicken broth mixture. 3. Microwave, uncovered, at high (100%) until stew is slightly thickened, 18-24 minutes, stirring after half the cooking time. If using oven other than Sharp Carousel, stir 2 or 3 times during cooking. Makes 4-6 servings.
