Pizza Meatloaf
Ingredients
2 lbs. ground beef
1/2 C. chopped onions
1 C. cracker crumbs (crushed)
1/2 C. parmesan cheese
1/2 C. milk
2 eggs
1 tsp. oregano
salt and pepper to taste
Topping:
1 jar spaghetti sauce
1C. shredded mozzarella cheese
Cooking Instructions
Mix all meatloaf ingredient in a bowl and blend by hand. Shape into an oblong ball. For a large family, use all in one ball. For smaller families, make two balls and freeze one. For singles, make three or four and freeze the unused portions. Bake at 350º for 50 minutes. Remove from oven and cover with spaghetti sauce. Return pan to the oven for another 15 minutes. Remove and sprinkle the top with the cheese and let it melt. It’s best to cook the meatloaf in the serving dish, therefore, eliminating the loss of any of the sauce. If not, transfer the meatloaf and sauce into the serving dish before adding the cheese.
