Zucchini Meat Sauce
Ingredients
1/8 large onion chopped
1/2 Tbsp. parsley, finely chopped
1/3 clove garlic, crushed
1/8 C. vegetable oil (or less)
1/4 pound zucchini (about 6) unpeeled, finely diced
1/3 C. tomato sauce
1/3 tsp. basil
1/8 bay leaf
1/8 pound ground beef
Cooking Instructions
Saute onion, parsley and garlic in oil about 10 minutes. Stir in zucchini and simmer about five minutes, stirring occasionally. Add tomato sauce, basil and bay leaf, and simmer for 30 minutes, stirring occasionally. Meanwhile, brown ground beef until just brown and separated. Stir meat into first mixture (remove bay leaf) and serve hot with parmesan cheese, over pasta, potatoes or rice, or even a bun, as desired.
