Tree Oyster Mushroom Ginger Soup
Ingredients
6 C. chicken broth, low fat, low sodium
1 tsp. sesame oil
1 C. fresh tree oyster mushrooms, or shiitake mushrooms
1 C. sliced white mushrooms
2 cloves garlic, minced
2 Tbsp. minced green onions
1 Tbsp. minced ginger
fresh ground white pepper
Cooking Instructions
Heat 1/2 C. broth and oil in a stockpot over high heat. Add both kinds of mushrooms. Saute for 5 minutes. Add garlic. Saute for 1 minute. Add green onions, remaining broth, and ginger. Simmer for 15 minutes. Sprinkle with fresh ground white pepper and serve.
