Sugar Free Lemon Cookies
Ingredients
1/2 C. butter or margarine
1 tsp. vanilla
1 tsp. grated lemon peel
1 C. flour
1/4 tsp. baking soda
1/4 tsp. salt
1 egg, slightly beaten
1 Tbsp. liquid artificial
12 whole saccharin tablets
1 tsp. water, to dissolve tablets
pecan halves (optional)
Cooking Instructions
Cream shortening in a mixing bowl. Add liquid sweetener, egg, vanilla, and lemon peel. Beat well. Combine flour, baking soda, and salt. Add to creamed mixture. Drop by tsp. onto an ungreased cookie sheet. Press flat with a fork. Bake at 375 degrees F. for 8 to 10 minutes, or until light brown. Pecan halves may be pressed into the top of each cookie before baking.
