Stuffed Flank Steak
Ingredients
1 pound flank steak
1 C. soft whole wheat breadcrumbs
1/4 C. chopped onion
1/4 C. chopped celery
1/4 C. chopped carrots
1/4 C. chopped tomato
1 Tbsp. parsley flakes
1/2 tsp. powdered thyme
1 dash pepper
2 Tbsp. water
Cooking Instructions
Pound steak to tenderize. Cut pocket in center of steak. Combine remaining ingredients; mix well. Stuff steak and secure opening with skewers. Broil 3 inches from heat 3 to 4 minutes on each side, or longer to taste. To serve, cut thin slices diagonally across grain.
