Quick Vegetable Medley
Ingredients
2 C. frozen mixed vegetables, thawed (broccoli, cauliflower, carrots)
2/3 C. white wine
2 tsp. fresh dill, minced
3/4 tsp. garlic, minced
2 tsp. fresh lemon juice
salt and pepper, to taste
Cooking Instructions
Combine all ingredients in a saucepan and cook over medium-high heat for 5 to 6 minutes. Remove the vegetables with a slotted spoon and keep warm. Bring the liquid remaining in the pot to a boil. Lower the heat and reduce by 1/3. Pour over the cooked vegetables and serve.
