Classic Chicken Swiss Steak
Ingredients
3 carrots, thickly sliced
2 Tbsp. cooking oil, divided
1 lb. boneless skinless chicken breasts
1 can diced tomatoes (14-1/2-oz.), undrained
1 can tomato sauce (8-oz.)
1 tsp. sugar
1 tsp. oregano, dried
1 C. chopped onion
1 C. chopped celery
1 can drained mushrooms (4-oz.)
cooked egg noodles, brown
rice, or mashed potatoes
Cooking Instructions
In a large skillet, sauté carrots in 1 Tbls. oil until crisp tender; remove and set aside. Cut meat into pieces and add to remaining oil in skillet. Cook until browned on both sides. Add tomatoes, tomato sauce, sugar and oregano; cover and simmer for 1 hour. Add onion, celery, mushrooms and carrots. Cover and simmer for 45 minutes or until meat and vegetables are tender. Serve over noodles, brown rice, or mashed potatoes.
