Hamburger Soup
Ingredients
1 pound ground beef
1 onion chopped
1 package mixed frozen vegetables-16 oz. (carrots, beans, corn, and peas)
3 celery ribs including tops chopped
1 can beef broth-14 1/2 oz.
Or 3 beef bouillon cubes
1 green pepper chopped
1 envelope dry onion soup mix
1 can tomato sauce-8 oz.
1/2 C. barley
1/2 tsp. freshly ground black pepper
2 Tbsp. fresh oregano chopped
Or 1/2 tsp. dried oregano
2 Tbsp. fresh basil chopped
Or 1/2 tsp. dried basil
2 sprigs fresh thyme
Or 1/2 tsp. dried thyme
1/2 tsp. paprika
1 bay leaf
1 Tbsp. seasoned salt
1 Tbsp. soy sauce
1/2 C. chopped fresh parsley
Or 2 Tbsp. dried parsley
1 package small alphabet shaped pasta 7 oz.
Cooking Instructions
Brown the ground beef in a frying pan. Drain off the fat. You can reduce fat content even further by placing the beef in a colander and running hot water over it. Put the beef and all ingredients except the alphabet pasta into the crock pot. Add water to within 1 inch of the top of the crock pot. Cook on high for 8 hours. About 15 minutes before serving add the alphabet pasta to the crock pot and continue cooking until pasta is done. Serve with fresh, soft rolls.
