Lemon Meringue Pie
Ingredients
1-1/2 C. water
4 packages Equal, or 1 Tbsp. sweetener
4-1/2 tsp. cornstarch
2 eggs
1/3 C. lemon juice
4 egg whites (meringue)
4 packages Equal (meringue)
1-1/2 tsp. cream of tartar (meringue)
Cooking Instructions
Cook all ingredients in double boiler until thickened. Pour into pie shell. Top with meringue, which has been beaten stiff. Bake at 450 degrees F. 15 minutes, or until golden brown.
