Chocolate Chip Orange Cake
Ingredients
2 C. flour, all purpose
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 C. sugar
1/2 C. chopped walnuts
6 ounces real chocolate chips; semisweet, divided
2 large eggs
1/4 C. milk
1/2 C. orange juice
2 tsp. grated orange rind
1 tsp. pure vanilla extract
1/3 C. butter or margarine; melted and cooled
Cooking Instructions
Preheat oven to 350. In large bowl, combine flour, baking powder, salt baking soda and sugar. Stir in nuts and 3/4 C. of the chocolate chips. In a medium bowl, beat eggs with milk, orange juice, rind and vanilla. Then blend in butter or margarine. Add egg mixture, mixing just until dry ingredients are moistened. Spread in greased, lightly floured 4 1/2 x 8 1/2 loaf pan. Sprinkle evenly with remaining chocolate chips. Bake until golden 55-60 minute or till a wooden pick inserted in middle comes out clean. Cool in pan 10 minutes then turn out onto wire rack and complete cooling before slicing.
