Blackberry Wine Cake
Ingredients
8 1/4 ounce box white cake mix
3 ounce box blackberry flavored gelatin
4 eggs
1/2 C. vegetable oil
1 1/2 C. blackberry wine
1/2 C. chopped pecans
1 C. confectioners sugar
1/2 C. butter or margarine
Cooking Instructions
Preheat oven to 325. Grease and flour 9-10-inch tube pan. Put chopped pecans in bottom of pan. Combine cake mix, blackberry gelatin, eggs, oil, and 1 C. blackberry wine. Beat 2 minutes; pour batter over top of pecans. Bake at 325 for 40-45 minutes or until cake tests done. Pour 1/2 of blackberry wine glaze over top of cake while until warm. Let set 10 minutes then remove cake from pan. Allow cake to cool fully before pouring remaining glaze on top. Blackberry Wine Glaze – Mix together confectioner’s sugar, 1/2 C. blackberry wine, plus soft butter/margarine. Beat until smooth.
