Black Bottom Cupcakes
Ingredients
8 ounces cream cheese
1 egg, unbeaten
1/3 C. sugar
1/8 tsp. salt
6 ounces chocolate chips
Chopped nuts
Batter:
1-1/2 C. flour
1 C. sugar
1/4 C. cocoa
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
1 C. water
1/3 C. cooking oil
Cooking Instructions
Filling: Combine filling ingredients except chips and nuts; beat until well blended. Stir in chips and nuts. Set aside. Beat all batter ingredients until well combined. Fill muffin cups lined with paper baking cups 1/3 full of batter. Top each with heaping tsp. of cheese mixture (divide and use all of cheese mix). Bake at 350 degrees for 18 to 20 minutes. Do not over bake.
