Banana Cake
Ingredients
2-1/4 C. whole-wheat pastry flour
2-1/2 tsp. baking powder
1-1/2 tsp. baking soda
2-1/4 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. ground allspice
3/4 C. honey
3/4 C. unsweetened applesauce
4 tsp. egg replacement mixed with 8 Tbsp. water and beaten until frothy
3 C. mashed banana
3/4 C. raisins
3/4 C. chopped walnuts (optional – high fat)
Cooking Instructions
Preheat oven to 350 degrees. Mix the dry ingredients together; set aside. Mix the honey and applesauce together. Add the egg mixture, banana, raisins, and walnuts. Add the wet mixture to the dry and mix well. Turn into a nonstick 13 x 9-inch pan and flatten slightly with a spatula. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
