Indian Carrot Salad
Ingredients
1 Tbsp. corn oil
1 Tbsp. lime juice
1/2 tsp. cumin, ground
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. garlic, minced
4 C. carrots, sliced and cooked
1/2 C. wheat sprouts or cooked
wheat berries, for garnish
Cooking Instructions
Whisk oil and lime juice together in a large bowl. Whisk in cumin, cinnamon, salt and garlic. Stir in carrots. Cover and refrigerate until cold. Serve chilled, garnished with wheat sprouts.
