Fruit Puff Pancake
Ingredients
5 egg substitute equivalents
1/2 C. skim milk
1/2 C. flour
1 Tbsp. vanilla extract
4 C. mixed fresh fruit (strawberries, blueberries, bananas), sliced
Cooking Instructions
Preheat oven to 425 degrees F. Spray a pie plate or ovenproof skillet with nonstick cooking spray. In a large bowl, combine eggs and milk. Add flour and vanilla. Pour batter into prepared pan; place in oven. Bake for 15 to 20 minutes until batter is puffed and edges are browned. Remove puff pancake. Fill center with fruit; cut into wedges; serve.
