Chocolate Mint Cheesecake
Ingredients
1-1/4 C. graham cracker crumbs
1 Tbsp. butter, melted
1 Tbsp. water
2 Tbsp. cocoa powder
16 oz. low fat cream cheese
1/4 C. sugar
1/4 C. peppermint schnapps
2 eggs, beaten
3/4 C. cocoa
1 tsp. vanilla
Cooking Instructions
Preheat the oven to 325 degrees F. To make crust, combine the first 4 ingredients. Press into the bottom of a spring form pan and bake for 5 minutes. Remove crust from oven and let cool. Combine the cream cheese and sugar, and beat well. Add the remaining ingredients and pour over crust. Raise the oven temperature to 375 degrees F. Bake for 40 minutes until set. Cool before serving.
