Ingredients

1 C. leftover mashed potatoes
1/2 C. any green vegetable
1 egg

Cooking Instructions

Mash everything together, breaking down the green or other vegetable added to mashed potatoes. Add the egg and mix well. Add any seasoning desired. Fry in serving-sized patties until golden on both sides.
