Banana Raisin Pudding
Ingredients
1 medium ripe banana
1-1/2 tsp. lemon juice
2 eggs
1/3 C. nonfat dry milk
1/2 C. plain low fat yogurt
2 slices white or whole wheat bread, crumbled
sweetener equivalent to 6 tsp. sugar
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 tsp. vanilla extract
1/4 C. raisins
Cooking Instructions
Preheat oven to 350 degrees F. In a blender container or food processor, combine all ingredients, except raisins. Blend until smooth. Stir in raisins. Pour mixture into a 1-quart casserole or baking pan that has been sprayed with a nonstick cooking spray. Bake uncovered, 40 minutes, until set. Serve hot or cold.
