Vichyssoise
Ingredients
5 medium potatoes sliced
4 leeks, white and light green sliced
1 large onion chopped
2 C. chicken stock
2 C. milk
1 C. heavy cream
1 1/2 tsp. salt
Chopped chives fresh or frozen
Cooking Instructions
Combine all ingredients except milk, cream and chives in crock. Cook on high for 3 hours. Puree mixture in blender or food mill and return to cooker. Add milk and cream and stir well. Heat to boiling for about 1 hour on high. Chill and serve with chives.
