Fresh Apple Nut Cake
Ingredients
2 eggs
1 C. vegetable oil
1 3/4 C. sugar
2 1/2 C. self-rising flour
3 C. peeled chopped apples
1 C. chopped pecans
1 tsp. cinnamon
1 tsp. vanilla
Cream cheese icing
Cooking Instructions
Preheat oven to 300. Grease a 13 x 9 x 2 inch baking pan. Beat eggs in mixing bowl. Add oil and sugar; beat well. Add remaining ingredients, except Icing; blend thoroughly. Pour batter into prepared pan. Bake for 1 hour and 10 minutes or until cake begins to pull away from sides of pan. Cool in pan on wire rack. Spread with Cream Cheese Icing. If using all-purpose flour, sift 1 tsp. salt, 1 tsp. baking powder, and 1 tsp. baking soda with flour. Cream cheese icing 2 packages (3 ounces each) cream cheese, softened 1/4 C. (1/2 stick) butter or margarine, softened 4 C. sifted confectioners’ sugar (about 1 pound) 2 tsp. vanilla Beat cream cheese and butter together until light and fluffy. Gradually beat in sugar until smooth. Add vanilla and blend thoroughly.
