Crumbly Topped Pear Oatmeal Cake
Ingredients
1 3/4 C. all-purpose flour
1/2 C. firmly packed light brown sugar
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground nutmeg
1/4 C. w fat buttermilk
3 Tbsp. margarine; melted
1 tsp. vanilla extract
1 egg
1 egg white
1 1/2 C. pears – unpeeled, ripe, chopped
1 C. oatmeal, uncooked and divided
Vegetable cooking spray
1/4 C. all-purpose flour
3 Tbsp. brown sugar
1 1/2 Tbsp. margarine, melted
Cooking Instructions
Combine first 12 ingredients in a large bowl; beat at medium speed of an electric mixer until well blended. Stir in pear and 1/2 C. oats. Spread batter into a 9-inch round cake pan coated with cooking spray. Combine remaining 1/2 C. oats, 1/4 C. flour, and next 2 ingredients, tossing well with a fork until crumbly. Sprinkle over batter. Bake at 350 for 45 minutes or until wooden pick inserted in center comes out clean.
