Sugarless Cake
Ingredients
1 C. raisins
2 C. water
1 egg, beaten
1/2 C. shortening
1 C. rolled oats
1-1/2 tsp. vanilla
1-1/2 tsp. Equal sweetener
1 C. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
Cooking Instructions
Combine raisins, water and cinnamon in saucepan under low heat for 15 minutes; let cool. Add beaten egg, shortening, oats, sweetener, and vanilla. Sift flour, salt, soda and cinnamon. Mix all together well. Pour into a greased 1-layer cake pan. Bake at 350 degrees F. for 30 to 35 minutes. Cool on wire rack.
