Diabetic Key Lime Pie 2
Ingredients
1 (13 oz.) can evaporated skim milk
2 tsp. vanilla
2 envs. plain gelatin
1/3 C. lime juice, strain if fresh
1 C. boiling water
20 pkgs. Equal
Zest of 3 limes, grated rind
Green food coloring
Cooking Instructions
Combine all filling ingredients, and mix thoroughly. Pour filling into unbaked piecrust. Sprinkle nutmeg over filling. Bake at 475 degrees F. for 10 minutes. Reduce heat to 425 degrees F., and bake another 15 minutes without opening oven door. Test for doneness by sticking a knife in pie center, baking another 5 minutes if knife does not come out clean. Cool to room temperature, out of drafts. Cut into serving pieces.
