Evelyn’S Wild Duck
Ingredients
2 duck
Salt and pepper
2 tablespoons cooking oil
3 medium onions
1 green pepper
2 ribs celery
2 turnips, or 5-6 jerusalem artichokes, peeled
1 small jar (2 ounces) pimiento
2 cloves garlic, crushed
2 strips bacon
Cooking Instructions
Rub the inside of the ducks with salt and pepper. In a heavy Dutch oven, heat oil; add ducks and brown on all sides. Remove ducks and set aside. coarsely chop onions, green pepper, celery and turnips. To remaining oil in Dutch oven add vegetables and cook until wilted. Add pimiento and garlic. Return ducks to pan. Season with salt and pepper. Pour in about 2 cups water. (ducks should be half-covered.) Place slice of bacon on each duck. Cover pan and bake in 300 degree oven for 3 hours, or until ducks are tender. Serve ducks with vegetable sauce, mashing vegetables if desired.
