Curried Carrot Soup
Ingredients
1 medium Onion, chopped
2 Tbsp. Olive oil
1 lb Carrots, chopped
2 ea Garlic cloves, chopped
1/2 tsp. Yellow mustard seed
1/2 tsp. Turmeric
1/2 tsp. Ginger
1/2 tsp. Cumin
1/4 tsp. Cinnamon
1/8 tsp. Cayenne
1 Tbsp. Lemon juice
1 C. Water
3 Tbsp. Ghee
3 Tbsp. Flour
4 C. Soy milk, water
1 Tbsp. Honey or other sweetener
Cooking Instructions
Saute onion in olive oil till golden. Add carrots, garlic, spices and lemon juice. Cook for 2 to 3 minutes, stirring constantly. Add water, cover pan tightly and simmer until the carrots are tender, about 20 minutes. Puree in a blender. Add small amounts of soy milk or water if necessary. In a pot, melt ghee and add flour. Cook for 2 minutes, stirring often. Add the rest of the soy milk and sweetener. Cook stirring until the sauce is very hot.
