Vegetarian Casserole 3
Ingredients
1 stalk celery, chopped
1 med. onion, chopped
1 sm. red pepper, chopped
2 Tbsp. vegetable oil
2 C. wide noodles, cooked & drained
1/2 C. shredded Monterey Jack cheese (6 oz.)
1 C. broccoli cuts, cooked & drained
1/2 C. milk
3/4 tsp. salt
1/8 tsp. pepper
1/4 C. dry bread crumbs
2 Tbsp. shredded cheddar cheese
1 Tbsp. wheat germ
1 Tbsp. butter or margarine, melted
Cooking Instructions
Saute first three ingredients in oil until tender but not brown. Stir in noodles, Jack cheese, broccoli, salt and pepper. Turn into an ungreased 1 1/2 quart casserole. Bake, covered, at 350 degrees for 15 minutes. Combine crumbs, cheddar, wheat germ and butter; sprinkle around the edge of casserole. Bake, uncovered for 10 minutes. Serves 4.
