Turkey Frittata
Ingredients
1/2 C. onion, sliced
1 garlic clove, minced
1 Tbsp. oil
1 C. mushrooms, sliced
1 C. frozen chopped spinach, defrosted and squeezed dry
2 Tbsp. lemon juice
1/8 tsp. black pepper, ground
1 C. cooked turkey, chopped
6 eggs, beaten
Cooking Instructions
Sauté onion, garlic and mushrooms in oil for 5 minutes. Add spinach, lemon juice and pepper. Cook over low heat for 3 minutes. Add turkey and eggs to spinach mixture. Pour into a greased 9-inch round baking pan. Bake at 350 degrees F. for 25 to 30 minutes, or until eggs are set. Cut into wedges to serve.
