Tuna Wedges
Ingredients
2 eggs
1 1/2 C. cooked rice
6 green onions, finely chopped
2 cans tuna (7 oz.)
1/2 C. butter
1/4 tsp. thyme
1 C. fine dry bread crumbs
Cooking Instructions
In large mixing bowl beat eggs with fork. Add rice, onions and undrained tuna. Mix well. In small glass bowl place butter. Microwave at high 1 minute, until melted. Add to tuna along with thyme and crumbs. Mix well. Spread mixture evenly in lightly greased 9-inch glass pie plate. Cover with wax paper. Microwave at high 9 to 11 minutes, rotating dish 1/2 turn after 5 minutes. Serve in wedges. Garnish with tomato slices. Makes about 6 servings.
